DO NOT wash with water or soap.
Keep Board in contact only with the dough, never grease it with fillings or other elements.
Clean your Board regularly by scraping it with a dry scraper following the grain of the wood (see video)

This size of Board is suitable for all processes: kneading, rolling and closing of filled pasta.
The recommended size for an easy run is 2/3 eggs of Sfoglia.
